GEA FlowCookは、垂直方向および水平方向の気流の組合せの利点を、小規模から中規模までの生産用の汎用インライン クッカーに凝縮させたものです。独立して温度と湿度が制御される2つのゾーンを持つデュアルゾーンオーブンで、熱風調理、蒸し料理、ローストなどに使用されます。バランスのとれた調理ゾーンが、パッシブ排気システムとともに熱の損失と外からの排気の流入を非常に低レベルに保ちます。気流の最適化、熱伝達の最大化、優れた保温により、エネルギー消費量をさらに低減しています。その結果、環境に配慮したソリューションと低ランニングコストを実現しました。

先端技術各調理ゾーンにおいての正確な露点制御と温度制御
GEA FlowCookは垂直方向および水平方向の気流を組み合わせて、オーブン内の効率的な熱伝達と条件の制御を達成しています。独立した2つのチャンバーはバランスよく配置され、同じ（ただし鏡面）気流を採用しているので、各ゾーンで別々の調理条件を設定し、調理プロセスを正確に制御することが可能です。各ゾーンの湿度は露点により個別に制御されますが、気流は広範な用途に対応できるよう完全に調整可能です。
垂直気流
調理工程の途中の垂直気流は高速で、焼き色やローストに優れています。低速に設定すると、歩留まりをほとんど落とさずにパリパリ感をコントロールすることができます。また、垂直気流を適切なタイミングで適用することで、着色料をほとんど使用しないナチュラルロースト・スキンレスローストも可能です。
