Perfect roasting requires a balance of time, airflow, dewpoint, and temperature. In most commercial ovens, this means compromise. A high dewpoint improves yield but prevents browning. Three cooking zones

Getting the balance right

Zone one cooks at a high dewpoint. It uses the latent heat of steam to cook quickly and gently. This keeps the meat succulent. The impingement zone blasts the product with hot dry air. It dries the surface, but not the core. The dewpoint is dropped in zone three for perfect browning. Beautifully roasted food and maximum yield.
