Perfect roasting requires a balance of time, airflow, dewpoint, and temperature. In most commercial ovens, this means compromise. A high dewpoint improves yield but prevents browning. A lower dewpoint browns but reduces yield and quality. But control these parameters and you’ll control the process. You will achieve perfect roasting, every time, whatever the product.
Three cooking zones

The CookStar 1000 follows the science of cooking. It uses three cooking zones that work together in a unique, patented combination. Each zone is controlled separately. Each performs its own role in the cooking process.  Your result?  The seemingly impossible: high yield with perfect browning.
Getting the balance right

Zone one cooks at a high dewpoint. It uses the latent heat of steam to cook quickly and gently. This keeps the meat succulent. The impingement zone blasts the product with hot dry air. It dries the surface, but not the core. The dewpoint is dropped in zone three for perfect browning. Beautifully roasted food and maximum yield.
Accurate control and versatility
