从结构的角度来看，传送带采用塑料制成，其向上倾斜的侧面可以容纳产品，而顶板则采用不锈钢制成。装有水的隔热水箱倾斜到一个位置，以便排水。
冷却系统利用通过糖酵解水/水外部热交换器进行冷却的水，由PLC管理的调节阀控制。冷却水通过泵进行再循环，该泵通过可调节的喷雾系统将冷却水分布在整个表面上，从而确保了产品的均匀冷却。冷却水液位通过PLC保持。
为了调节产品的冷却，可以调节：冷却时间、水温、通过增加或减少水的再混合。
冷却机的打开是通过自动多层系统完成的，该系统允许皮带与面板保持一定距离，从而易于接近进行清洗操作。此外，本机采用不锈钢制成，可简化清洗过程，并为输送带提供冲洗坡道，以减少清洗时间。整个结构旨在避免产品残留。

- 冷却长度：3-6m。
