GEA fresh pasta systems for double sheet pasta deliver superior final product quality, thanks to the integrated vacuum system on the forming roller. When dealing with very soft fillings that struggle to deform the dough, this innovative feature creates a pocket in the pasta sheet, allowing for a higher percentage of soft filling—up to 75%—inside the product, while minimizing waste.
Moreover, the pocket created from the vacuum system, permits to fill the double sheeted product with fillings that have more than 50% moisture content and with larger pieces inside (up to 25x10 mm). This also ensures a better closure of the ravioli that prevents the filling from escaping during cooking.
The filling flow is precisely controlled by a guillotine system; the dosage is managed by pistons featuring plastic ends and air injection to ensure clean detachment of the filling. Each filling punch's quantity is adjustable with individual shutters, making the machine more efficient and versatile.

Machine performance:
It receives the scrapes from the previous machine and it cuts them longitudinally and transversally, before unloading them on the next machine in line. The scrapes are cut 20x20 mm in order to be easily reused for mixing.
The TSRW features sheet loading belt, longitudinal cutting rollers, a transversal multiblade shear and a conveying hopper to the next machine.
It is completely washable and fully openable, in addition to having a stainless-steel structure.
