Frying stabilizes coatings, enhances color and crispness, and lends that distinctive mouthfeel to flashfried and deepfried food products. Achieving high-quality fried products depends on oil quality, temperature, and flow, all of which are critical factors. To optimize your frying process and accurately predict future profitability, data is the key. GEA ProFry is developed to help you be in control of all these parameters and elevate your deep frying process.
The GEA ProFry industrial fryer is designed for a wide range of deep and flash fried applications such as pork, poultry, seafood, vegetables and plant based products. Typical applications include tempura coated nuggets, crumb coated schnitzel, flour coated wings, home style tenders, coated fried fish and coated fried onion rings.

Enhanced active sediment removal system
The GEA ProFry has an enhanced active sediment removal system with frequency-driven drives to find the optimal speed for adaptive removal of settled, suspended and floated sediment. The crosswise scraper belt positioned at 1/3 of the way along the fryer minimizes sediment retention time in the oil. A scraper belt runs along bottom over the total length of the fryer to remove residual sediment at the outfeed. A built-in slotted screen filter and a new, patented, floating sediment removal solution remove floating coating (surface) sediment out of the fryer.
GEA SmartControl HMI (Human-Machine-Interface)
SmartControl HMI offers you a simplified, personalized operator interface and insightful, easy-to-export data. The new GEA SmartControl HMI platform runs on a PC to unlock features that were previously impossible and delivers unprecedented levels of transparency over current and historical process data and events. Through the 21.5” multi-touch screen, operators have total visibility of the process and can make necessary adjustments to keep each element in-line with optimum levels. Alarms provide alerts should any data point drift off limit. This level of process control ensures that productivity levels and product quality are maintained in perfect harmony.
In-line oil quality checks
A closer look at your oil quality is getting more and more attention. Retailers are more focused on this information and also increased oil prices drive the need for a closer control of the oil quality Till now oil quality could only be taken off-line. GEA has developed a patented system where we can online, real time measure and store the oil quality data during production.
