ダブル スパイラル オーブンでの3段階調理のコンセプト
GEA CookStar Turboは、世界で唯一のダブル スパイラル オーブンでの3段階調理のコンセプトです。特許取得済みの設計により、水平気流とターボゾーンの衝突気流が組み合わされています。これにより、水平気流のみのオーブンに比べ、歩留まりと品質において新しい業界標準となる優れた調理効率を実現します。
プロセス制御と効率
GEA CookStarによる工程制御と効率
2つのゾーン間で最高100°C (180°F) までの調理温度差を許容できる柔軟性があります。露点測定によるプロセス制御、調理方法の把握。露点は各調理チェンバー内で独立に測定します。2つのゾーン間の露点差は最大45°C。このオーブンはバランスのとれたエアフロー、アクティブな温度制御、適度な排気制御により、各ゾーンの状態を正確にコントロールします。
