GEA CutMaster V

The versatile GEA CutMaster V Gen 3, cutting machine features a vacuum-sealed bowl which helps eliminate air from food emulsions during food processing. This feature contributes to improved yield, more dense, visually appealing emulsions and longer product shelf life.

This compact workhorse features a TopCut VSH (versatile, safe, hygienic) knife head, which cuts, mixes and emulsifies products under vacuum. Processing under vacuum helps stimulate protein extraction, reduce jelly deposits, boost yield and increase shelf life. Eliminating air from the process can also promote better water binding capabilities and result in a more dense emulsion with improved color and flavor. The volume of the mass increases under vacuum, as a consequence even the smallest particles would get chopped to achieve a high degree of consistency and particle fineness.

The GEA CutMaster V is perfect for a wide range of product applications, including course, to very fine sausage, fish, poultry, pork, beef, vegan, vegetarian and meat-replacement products, processed cheese, sauces and a variety of basic products used in the food processing industry.

Optimum operation of even the best bowl cutter is only possible, if the software systems are of equal quality. Digitalization helps you to raise the bar and constantly improve. GEA’s intuitive control system CutControl Pro Touch allows you to automate the operational cutting processes by recording for every single product. With the External Recipe Editor you can create and edit recipes on the machine and on an external PC as well. And to further analyze and improve production GEA offers the on-premise process data monitoring system GEA Process Manager. 

Alternatively, the cloud-based InsightPartner continuously monitors machine condition and performance, delivering valuable insights based on real data. This comprehensive overview of the operation of the equipment allows maintenance managers to easily track key performance indicators that are critical to the business success as well as optimize uptime and planned maintenance.

The unique TopCut VSH (Versatile – Safe - Hygienic) knife system is designed to virtually eliminate vibration, and enable cutting speeds of up to 162 m/s. The new knife head also augments product  flow to reduce batch times. 

Versatile: A single set of knife discs and components is used for all possible knife head configurations. This means that you don’t need to change the number of knife discs when switching from one to two tracks, or vice versa. And with the option of different knife types for various cutting applications, the TopCut VSH Knife system is a true multi-tasker.
Safe: Fewer knife discs can also mean better operational safety, as there's less weight on the shaft, which reduces the rotational mass. The knife discs are clearly marked to avoid incorrect installation, which is a further aid to safety, and the knives are all interchangeable. Furthermore, the magnetic features of the knife discs ensure a safe handling for the operators.
Hygienic: The knife holder is integrated into the knife disc of the GEA TopCut VSH, which makes thorough cleaning easier, and further reduces the possibility of incorrect assembly.

The combination of a geometrical bowl design and large inlet area makes it possible to achieve a filling level of up to 95%, so you can maximize production during each batch. The large inlet area also means faster product infeed into the cutting area, and accommodates bigger product pieces. The 360° cutting area also helps to achieve optimum emulsification results. By using the so called 'baffle plate', the cutting area can be set up from wide to small to influence the throughput and determine the degree of fineness.
